My Family!
I said it before, and I will say it again; I am RICH beyond belief with the family the Lord blessed me with! Parents who, no matter what, always display their unconditional love, grandparents who have spoiled me with hugs n kisses, aunts and uncles who have blessed me with some of the most wonderful cousins in the entire universe!, cousins who make me laugh and some who have filled my life even more with their children, brothers and sisters who make me feel sooo old :) ('thank you very much'), a niece and nephews who continuously teach me patience yet keep me in touch with my inner child, and two wonderful boys who keep me grounded! Could I ask for anything more?? I think not! Well, maybe a few bottles of wine. After all, the holidays are coming up and if you've seen Christmas Vacation....well, I need not say more! lol!
I was fortunate enough to have had two more wonderful people in my life. My Grandma Eva. A woman of graciousness! She was married to my Grandpa 'T' up until her death in 1994. There was nothing this woman wouldn't do for me. And my Grandpa Joel, 'Popo Gomez'. A man of strength! He was married to my Grandma Gomez up until his death in 2001. I remember looking into his blue eyes and just seeing his love for me. I was honored to be their first granddaughter and I am blessed to have them as my angels!
Have you ever had Oreo cookies? How about truffles? How about Oreo Truffles? Oh, ya, I went there! Lotsa 'yum' for your 'tum' and here's the recipe:
Easy Oreo Truffles
Ingredients:
1 package of Oreo cookies, finely crushed and divided
8oz. cream cheese, softened ('ahhh... did ya hear that hips?')
2-8oz. packages of Semisweet Baking Chocolate, melted
Directions:
Line a baking sheet with waxed paper. Mix 3 cups of the cookie crumbs and cream cheese until well blended. Shape into 42 one inch balls. Dip cookie balls in melted chocolate and place on baking sheet. Sprinkle with remaining cookie crumbs. Refrigerate for 1 hour or until firm. Enjoy!
